A Quite Sophisticated Chocolate Cake


You may be thinking to yourself that a chocolate cake with chocolate frosting is a bit boring but I felt compelled to share it with you because this cake is truly something special.
The special ingredient is sour cream, which is present in both the cake and the chocolate ganache frosting. It really gives the cake much more depth of flavour.
It is taken from Nigella Lawson's "How to be a Domestic Goddess" and confirms her position as the queen of chocolate.

Makes one 20cm cake

Ingredients:

Cake
  • 200g flour
  • 200g caster sugar
  • 3/4 tsp baking powder
  • 1/4 tsp bread soda
  • 1/2 tsp salt
  • 200g soft butter
  • 40g cocoa
  • 150ml sour cream
  • 2 eggs
  • 1 tsp vanilla extract
Frosting
  • 160g dark chocolate
  • 75g butter
  • 125ml sour cream
  • 1 tsp vanilla extract
  • 1 tbsp golden syrup
  • 300g icing sugar
Preheat oven to 180C and grease and line 2 x 20cm sandwich tins.
Combine the flour, sugar, baking powder, bread soda and salt in a large bowl and whisk in the butter.
In a jug, mix together the cocoa, sour cream, eggs and vanilla, then slowly add this mixture into the bowl, beating until completely combined.
Pour the batter into the prepared tins and bak for 30 minutes, or until a skewer comes out clean.
Leave to cool for 10 minutes in the tin and then turn out to cool completely on a wire rack.
To make the icing, melt the butter and sugar in the microwave. Allow to cool a little before stirring in the sour cream, vanilla and golden syrup.
Add in the icing sugar and beat with an electric whisk until completely dissolved and smooth.
When the texture is thick enough, spread onto the top of one of the cooled cakes and sandwich the other one on top. Then spread the remaining frosting all over the cake.
Sift some cocoa powder on top and enjoy!
